Tonight's dinner, off of the weekly meal plan, was a success. I made Parmesan Panko Pork Chops from Pinterest (yay, for alliteration!), topped with bruschetta.
I realized, after gathering the ingredients, that this was basically the same recipe I've already been using for fish, with pork substituted.
I began by prepping the bruschetta because I like to give it time for the flavors to meld.
Combine: 2 diced Roma Tomatoes, 1/4 chopped onion, two cloves pressed garlic, olive oil, balsamic dressing or vinegar, dried basil (fresh if you have it)
Next I preheated the oven to 450 degrees and prepped the pork chop breading.
Mix: Panko crumbs, hand full of parmesan cheese, spices, like oregano, basil, thyme, garlic powder.
In separate bowl, beat one egg.
I then breaded the pork chops by dipping each chop in egg, then coating with Panko mixture. I placed the chops on a foil covered pan.
Bake chops at 450 degrees for 20-25 minutes. If crumbs have not browned by the end of baking time, turn on broiler and broil for a minute or two. Watch the chops carefully!
Top with bruschetta or serve on the side. I completed our meal with a side of broccoli with a squeeze of lemon.
OK, a bonus look at our mealtime entertainment. :)
